Ingredients
1 peeled, cored and grated apple
2 boneless, skinless chicken breasts, diced
Half a red onion
1 tbsp of chopped parsley
50g bread crumbs
1 tbsp of chicken stock
a little wholemeal flour for coating, and either olive oil or ground nut oil for shallow frying.
Press out all the moisture from the apple with a teatowel or small hand towel.
Using a blender, mix together the apple, chicken, onion, parsely, breadcrumbs and stock.
Spread the flour across a plate, divide the mixture into 20 mini portions, shape each portion with your hand using the flour, into a ball.
Heat the oil in a non-stick frying pan, and over a medium heats cook the balls for 6-8mins or until golden brown and cooked through. Drain the balls on some kitchen roll and server either hot or cold as a healthy snack.
