West Texas Chili
1 pound of ground beef
1 cup of chopped onion
½ cup of chopped green bell pepper
2 cloves of garlic, minced
1-16 0unce can of tomatoes, cut up, undrained
1-16 ounce can of dark kidney beans, drained
1-8 ounce can of tomato sauce
2-3 teaspoons of Chili Powder
½ teaspoon of Basil, crushed
¼ teaspoon of salt
¼ teaspoon of black pepper
1. In a large saucepan cook the ground beef, onions, bell pepper and garlic until meat is browned. Drain fat.
2. Stir in undrained tomatoes, drained kidney beans, tomato sauce, chili powder, salt and pepper. Bring to a boil.
3. Reduce heat to a simmer and simmer for 20-25 minutes.
Makes 4 main dish servings.
If you wish you can top with grated Cheddar cheese for extra flavor.
